  1. Prepare Baby Bella Ratatouille. Set aside.
     
  2. Arrange shrimp into 4 pinwheel shapes using foodpicks to hold together.
     
  3. Dust shrimp with pan-searing flour; pat off excess. Heat olive oil in pan on MEDIUM-HIGH until oil faintly smokes; add shrimp. Turn over when edges change color about one-quarter of way up, 2-3 min.
     
  4. Reduce heat to MEDIUM; cook until internal temp reaches 120 degrees, 2-4 min. Check by inserting thermometer halfway into thickest part of shrimp.
     
  5. Add basting oil and butter; swirl. Baste with spoon until internal temp reaches 130 degrees. Transfer to clean platter; let rest at least 2 min.
     
  6. Spoon Baby Bella Ratatouille on individual plates; top each with 1 shrimp pinwheel. Remove food picks.
