Directions

  1. Season fish with salt and pepper; dust with pan-searing flour.
      
  2. Heat olive oil in large pan on MED-HIGH; add salmon. Sear until golden brown 3 min. Turn salmon. Reduce heat to MED. Cook 4-5 min, until internal temp reaches 120 degrees (check by inserting thermometer halfway into thickest part of salmon).
     
  3. Add butter and baste salmon, 1-2 min, until internal temp reaches 130 degrees. Transfer salmon to clean platter; let rest at least 2 min.
     
  4. Combine cooked gnocchi and sauce; portion onto serving plates and top with salmon.
