  1. Preheat oven to 350 degrees. Dust pork with pan-searing flour; pat off excess.
     
  2. Heat olive oil in oven-safe skillet on MED-HIGH, until oil faintly smokes; add pork. Cook 2-3 min until pork changes color one-quarter way up and seared side has browned. Turn over; place pan in oven. Cook 4-5 min until internal temp reaches 140 degrees (check by inserting thermometer halfway into thickest part of pork).
     
  3. Meanwhile, simmer peas and zucchini in boiling water until tender, 2-3 min. Drain and toss with 1 Tbsp basting oil. Season with salt and pepper; keep warm.
     
  4. Remove pork from oven and place pan on stovetop on MED. Add remaining 1 Tbsp basting oil and butter; carefully swirl. Spoon over chops to baste.
     
  5. Cook 3-4 min, until internal temp of pork reaches 145 degrees. Remove from pan; discard pan drippings. Let rest 5-10 min; keep warm.
     
  6. Add mushrooms and onions to pan; toss to mix, then cook 2-3 min until lightly browned. Add wine; simmer, stirring, 2-3 min, until almost dry.Stir in sweet red pepper sauce. Serve pork and sauce over noodles with vegetables.

Slice pork on a diagonal when serving.
