  1. Preheat oven to 350 degrees. Pound each piece of pork using flat side of meat mallet, flattening slightly. Dust pork with pan-searing flour; pat off excess. 
     
  2. Heat olive oil in ovenproof skillet on MED-HIGH until oil faintly smokes; add pork. Turn over when pork changes color one-quarter of way up and seared side has browned, 3-4 min.
     
  3. Place skillet with pork in oven; cook about 8 min until internal temp reaches 145 degrees (check by inserting thermometer halfway into thickest part of pork). 
     
  4. Transfer pan to stovetop on MED. Add basting oil and butter; swirl. Baste with spoon, 1-3 min. Transfer pork to clean platter; let rest 5-10 min. 
     
  5. While pork is resting, heat sauce in small saucepan on MED. Pool 1/4 cup warmed sauce on each plate; top with pork slice.
