  1. Preheat oven to 350 degrees. Dust pork with pan-searing flour; pat off excess. Heat olive oil in large ovenproof skillet on MED-HIGH on stovetop until oil faintly smokes; add pork.
     
  2. Turn over when pork changes color about one-quarter of way up sides and seared side has browned, 3-4 min per side.
     
  3. Place pan with pork in oven. Cook 4-5 min, until internal temp reaches 140 degrees. Check by inserting thermometer into thickest part of pork.
     
  4. Remove from oven. Add basting oil and butter to pan; carefully swirl. Spoon over pork. Cook on MED 1-3 min until internal temp reaches 145 degrees. Transfer to clean platter; let rest 5-10 minutes to reach minimum of 150 degrees.
