Pork Chops with Apple & Squash Chutney

Ingredients

Directions

  1. Preheat oven to 350 degrees. Lightly coat chops evenly on all sides with pan-searing flour; pat off excess.
     
  2. Heat 1 Tbsp oil in ovenproof skillet on MED-HIGH until oil faintly smokes. Place chops carefully in hot oil. When sides have changed color about 1/4 of way up, turn carefully.
     
  3. Place pan with chops in oven. Cook chops to 145 degrees internal temp, 8-10 min. Check by inserting digital thermometer halfway into thickest part of meat.
     
  4. While chops cook, heat 2 Tbsp oil in another pan on MED-HIGH, until oil faintly smokes, while chops cook. Add apples and squash; cook, stirring, 6-8 min until softened and lightly browned. Reduce heat to MED-LOW. Add apple cider. Simmer 8-10 min, until most liquid has evaporated. Stir in gravy; simmer 2-3 min. Stir in sugar and sage. Season to taste with salt and pepper.
     
  5. Remove chops from oven; add butter, shallots, and thyme to pan. Baste meat about 30 seconds with butter mixture; serve with chutney.
Options
  • Serve with Wegmans Long Grain and Wild Rice. 
  • For added convenience and less saturated fat, substitute 2 Tbsp Wegmans Basting Oil and 2 tsp butter for shallots, thyme, and butter.
