  1. Trim leek roots and dark green ends; discard. Slice each leek in half lengthwise; cut crosswise into 1-inch pieces. Add to bowl of cold water; stir leeks to loosen any dirt. Remove with slotted spoon; drain.
     
  2. Dust lamb with pan-searing flour; pat off excess. Heat olive oil in braising pan on MED-HIGH, until oil faintly smokes; add meat. Turn over when color has changed one-quarter of the way up and seared side has browned, about 3-4 min. Cover; cook, about 3-4 min, until internal temp reaches 125 degrees (check by inserting thermometer into thickest part of lamb).
     
  3. Add butter and basting oil to pan; swirl to combine. Spoon over lamb to baste, about 3-4 min, until internal temp is about 5 degrees less than desired doneness (refer to temp chart for final cooking times). Remove from pan; set aside.
     
  4. Reduce heat to MED; add leeks to pan. Cook, about 2 min, do not brown. Add mushrooms; cook, stirring, about 2 min. Add tomatoes, stir to combine. Cook, about 5 min, until vegetables are softened.
     
  5. Add red wine and demi-glace; season with salt and pepper. Add gnocchi to pan; cover. Cook, about 5 min, until gnocchi are soft. Slice lamb; serve over gnocchi with sauce.
Chef Tips
Drizzle with 1 tsp basting oil for garnish.
