  1. Preheat oven to 350 degrees. Dust chicken with pan-searing flour; pat off excess. Heat olive oil in oven-safe pan on MED-HIGH on stovetop until oil faintly smokes; add chicken. Turn when caramelized (edges brown about 1/4 way up sides), 3-4 min.
     
  2. Place pan with chicken in oven. Cook 6-8 min, until internal temp of chicken reaches 160 degrees. Check by inserting thermometer halfway into thickest part of meat.
     
  3. Remove from oven and place pan with chicken on stovetop on MED. Add finishing butter, carefully swirl. Spoon over chicken to baste. Remove from pan when internal temperature reaches 165 degrees, 4-5 min. Place chicken on platter, keep warm. Discard liquids from pan.
     
  4. Add maple syrup to pan; simmer to caramelize (brown) and slightly reduce, about 2 min. Add vinegar, stirring to deglaze; simmer to slightly reduce, about 2 min. Add gravy. Simmer, stirring constantly, 2-3 min.
