  1. Add broccoli to large pot of boiling salted water; cook 2-3 min. Drain; transfer to bowl of ice water. Drain; set aside.
  2. Dust patties with pan-searing flour; pat off excess. Heat olive oil in pan on MED-HIGH until oil faintly smokes; add patties. Turn over when patties change color one-quarter of way up and seared side has browned, 2-3 min.
  3. Reduce heat to MED-LOW. Continue to cook until internal temperature reaches 155 degrees (check by inserting thermometer halfway into thickest part of patty). Pour off excess drippings. Add basting oil and butter; swirl to melt. Baste patties with spoon, 1-3 min, until internal temp reaches 160 degrees. Transfer patties to platter; keep warm.
  4. Wipe pan clean. Reduce heat to LOW. Add pine nuts; cook, stirring, until toasted and lightly browned, 1-2 min. Add extra virgin olive oil, broccoli, and olives; season with black pepper. Cook, 4-5 min, until heated through. Serve broccoli mixture and patties with warm demi-glace.
