  1. Melt butter in large stockpot on MEDIUM heat. Add vegetables; sweat (soften without browning), 4-5 min. Add herbs; sweat 1 min.
  2. Add milk; bring to gentle simmer (do not boil). Whisk in crème fraiche until smooth.
  3. Add oysters; bring to simmer (3-4 min). Season to taste with worcestershire, tabasco and sea salt.
