  1. Heat beer and half of finishing butter in braising pan on HIGH; bring to boil. Add mussels; cook, covered, 3-5 min, or until mussels open. Transfer mussels to serving platter with slotted spoon (discard any that don't open).
     
  2. Return liquid to boil. Cook, 3-5 min, until liquid is reduced by one-third. Add remaining butter; stir until melted. Pour over mussels. Season with salt; garnish with parsley.
Chef Tips
10 oz (1 1/4 cups) organic vegetable or chicken broth can be used in place of beer.
