Stir-fry pan, candy thermometer

Directions

  1. Whisk eggs in large mixing bowl; add cornstarch and mix until smooth. Add shrimp and toss to coat; set aside.
      
  2. Heat 2 cups oil in pan to 350 degrees on MED-HIGH (check with candy thermometer).
     
  3. Working in two batches, fry shrimp, carefully turning, about 1 min per side. Remove shrimp from oil with slotted spoon; drain on double thickness paper towel. Set aside. Once all shrimp are cooked, carefully discard oil, allowing time to cool before disposing. Wipe pan with paper towel.
     
  4. Drizzle remaining Tbsp oil around sides of pan; tilt pan to distribute evenly. Heat oil in pan on MED-HIGH until oil faintly smokes. Add peppers and onions. Stir and toss, 3-4 min until crisp-tender. Add fried shrimp and lemon pepper seasoning, stir to heat through, 1 min.
Chef Tips
  • Oil from frying may be used again or saved and reused for up to 3 days, refrigerating oil until each use.
  • Use wok for best results.
