  1. Season shrimp with salt and pepper. Drizzle 2 Tbsp oil around sides of wok; tilt wok to distribute evenly. Heat oil in wok on HIGH until oil faintly smokes; add shrimp. Cook, stirring occasionally, 2-3 min, or until internal temp of shrimp is 130 degrees. (Check by inserting thermometer halfway into thickest part of shrimp.) Drain shrimp on paper towel; let rest 2 min. 
     
  2. Add remaining oil to wok. Reduce heat to MED. Add chiles, garlic, and ginger to wok. Cook, stirring, 30 sec. Add red peppers; cook, stirring, 30 sec.
     
  3. Add stir-fry sauce and chili oil to wok; bring to a simmer. Add shrimp, peanuts, and green onions. Toss to heat and coat.
