  1. Preheat oven to 450 degrees. Combine garlic, sage, rosemary, salt, and 1/4 cup basting oil in bowl. Mix well with hands to create a paste. Coat pork with paste, massaging it in.
     
  2. Toss mirepoix and 1/2 Tbsp basting oil in mixing bowl; place in single layer on foil-lined roasting pan. Place rack in pan; arrange pork loins on rack.
     
  3. Roast 30-35 min, until internal temp reaches 140 degrees. (Check internal temp by inserting thermometer halfway into thickest part of meat.) Transfer pork to clean cutting board; let rest 10 min. If needed, return pan to oven; roast until tender and caramelized.
     
  4. Transfer roasted mirepoix to serving platter. Serve with sliced pork and Savory Candied Ginger Sauce.
