  1. Preheat grill on HIGH 10 min. Coat cleaned grill grate lightly with vegetable oil.
     
  2. Season both sides of grouper with lime juice and oil; season with salt and pepper.
     
  3. Sear first side of grouper on grill until grouper has changed color one-quarter the way. Turn and sear other side.
     
  4. Reduce heat. Close lid. Grill grouper (1 inch thick or less) 3-4 min/side on MED. Grill grouper thicker than 1 inch, 5-6 min/side on LOW with vents open.
     
  5. Cook grouper to 130 degrees internal temp (check by inserting thermometer halfway into thickest part of fillet). Remove from grill; let rest at least 2 min. Break grouper into big flakes.
     
  6. Toast 4 tortillas on grill; top with 1/4 cup each Avocado Pozole Relish (see recipe), and grouper. Fold one end over and roll up. Serve with Jicama Slaw (see recipe).
