Preheat grill on HIGH 10 min.
  1. Clean grill with wire brush. Using soft cloth, coat grill grate lightly with vegetable oil.
  2. Season both sides of meat with salt and pepper to taste, drizzle both sides with basting oil(too much oil will cause flare-ups on the grill).
  3. Sear meat on grill 1 to 3 min until it has changed color one-quarter way up from the bottom. Turn over; baste (Brush seared side with basting oil. Sear 1 to 3 min.).
  4. Turn over; baste. Reduce heat to MEDIUM (for most cuts) or LOW (for cuts thicker than 1 inch); close lid.
  5. Cook meat to desired internal temperature (see chart); check by inserting thermometer halfway into thickest part of meat. While meat is cooking, warm Marsala sauce in pan on stove.
  6. Remove meat from grill, serve with warm sauce.
