Preheat grill on HIGH 10 min.
  1. Clean grill with wire brush; using soft cloth, coat lightly with vegetable oil.
     
  2. Season chops with salt and pepper; drizzle both sides with basting oil (too much oil will cause flare-ups on the grill).
     
  3. Sear chops on grill until they have changed color one-quarter of the way up from bottom, 2-3 min. Turn and sear other side, 2-3 min longer. Brush seared meat with basting oil.
     
  4. Turn brush with basting oil, and reduce heat to MEDIUM; close lid.
     
  5. Cook until internal temperature reaches 145 degrees, 7-8 min. Check by inserting digital thermometer halfway into thickest part of meat. Remove from grill and let rest 5-10 min. Serve with warm Mushroom Au Poivre Sauce.
