4 metal grilling skewers (if bamboo, soak 1 hour before use)

Directions

  1. Preheat grill on MED 10 min. Coat cleaned grill grate lightly with vegetable oil.
     
  2. Season peppers, tomatoes and nectarines with salt and pepper; drizzle with light coating of basting oil. Sear skins, turning every 2-4 min, until fork tender.
     
  3. Remove and discard any thick pieces of skin of peel that remain after grilling. Combine peppers, tomatoes, nectarines and lime juice in blender, puree. Reserve 1/2 cup and keep warm.
     
  4. Prepare kabobs by alternating squash, and chicken on skewers.
     
  5. Drizzle skewers with basting oil, season with salt and pepper. Place on grill and baste with puree. Grill, turning frequently, until internal chicken temperature is 165 (check by inserting digital thermometer halfway into thickest part of meat).
     
  6. Serve with reserve puree for dipping sauce.
