Marinade

You'll Need

1 EZ Foil Rectangular Roaster Pan (16 1/8 x 11 3/4 x 2 7/8-inch), heavy-duty aluminum foil, nonstick cooking spray

Directions

  1. Prepare marinade: Heat olive oil in skillet on MED, until faintly smoking; add garlic and cook, stirring, 2-4 min, until light brown.
     
  2. Remove from heat; add orange juice, lime juice, and cumin. Return to heat, bring to simmer 2 min. Remove from heat; set aside.
     
  3. Season chicken with salt and pepper; place in large bowl. Add marinade; coat well. Refrigerate for at least 24 hours.
     
  4. Grilling day: Combine rice, beans, stock, and sofrito in medium bowl. Set aside.
     
  5. Preheat grill on HIGH 10 min. Coat cleaned grill grate lightly with vegetable oil.
     
  6. Sear meat on grill until meat has changed color 1/4 way up from bottom, 2-4 min. Turn and sear other side.
     
  7. Spray foil pan well with cooking spray. Transfer rice mixture to foil pan, top with seared chicken. Cover pan tightly with large piece of foil, sealing well.  Reduce heat to LOW. Place pan on grill; close lid. 
     
  8. Cook 45 min-1 hour, until chicken reaches internal temp of 165 degrees. To check, carefully cut small X in top of foil cover and insert thermometer through slit into chicken. When chicken is done, remove pan from grill. Use oven mitts to carefully remove foil cover; avoid steam. Transfer chicken to clean serving platter. Serve chicken on top of rice.
