  1. Preheat grill on HIGH 10 min. Heat olive oil in large sauté pan on MED until oil faintly smokes; add shallot. Cook, stirring, 1-2 min, until translucent. Add mushrooms. Cook, stirring, 3-5 min, until tender. Add wine; continue cooking to reduce by half to syrupy consistency, about 3 min.
     
  2. Stir in demi-glace until smooth; simmer 1 min. Season with salt and pepper. Keep warm.
     
  3. Coat cleaned grill grate lightly with vegetable oil.
     
  4. Season both sides of steak with salt and pepper; drizzle both sides with basting oil (too much oil will cause flare-ups on the grill).
     
  5. Sear steaks until color changes one-quarter of the way up from bottom, 3-4 min. Turn over; baste (brush seared side with basting oil). Sear 3-4 min. Turn over; baste. Reduce heat to LOW (or MED for cuts thinner than 1 inch); close grill lid.
     
  6. Cook 8-10 min to 5 degrees below desired doneness (refer to meat cooking guide below for final internal temp). Check by inserting thermometer halfway into thickest part of steak. Transfer steak to clean platter; let rest 5-10 min. Serve with warmed sauce.
