Gluten-Free Sesame Ginger Tofu with Baby Bok Choy

Ingredients

  1. Preheat oven to 400 degrees. Toss tofu and 1 Tbsp oil in mixing bowl. Arrange tofu in single layer on parchment paper-lined baking sheet. Roast 12-15 min, until tofu begins to puff. Remove; set aside.
     
  2. Drizzle remaining 1 Tbsp oil around sides of stir-fry pan; tilt pan to distribute evenly. Heat oil in pan on MED until oil faintly smokes; add peppers and white onions. Cook, stirring occasionally, 4 min. Add garlic and ginger; cook, stirring, 30 sec. Add tofu and sauce. Stir; remove from heat. Set aside.
     
  3. Blanch bok choy 2 min in large pot of boiling, salted water. Drain; transfer to clean platter. Top bok choy with tofu mixture. Garnish with green onions.
