Preheat oven to 450 degrees.
  1. Create bed for turkey by mounding mirepoix in large roasting pan.  Top with turkey breasts, meaty side up. Rub with basting oil.
     
  2. Sear in pan on center rack of oven 15 min; reduce heat to 350 degrees. Roast about 1 hour and 15 min, or until internal temp reaches 165 degrees. Check by inserting thermometer into thickest part of turkey breast, away from bone.
     
  3. Transfer turkey to clean platter; cover with foil and let rest while preparing gravy.
     
  4. Make gravy: Place roasting pan with pan juices and mirepoix on stove; add gravy. Bring to boil on MEDIUM. Simmer 5 min. Remove from heat; strain through sieve. Discard vegetables.
