Directions

Two days before: Combine seasoning salt and sugar in small bowl.  Remove pop-up timer; loosen turkey skin at breast and drumstick. Using clean hands, rub 1/3 of mixture on turkey breast, 1/3 on legs and thighs and the remaining 1/3 inside turkey cavity. Place turkey in pan; cover with plastic wrap. Refrigerate 48 hours.
 
Day of roasting: Preheat oven to 450 degrees.
  1. Place turkey, breast-side up, on rack in shallow roasting pan, drizzle with basting oil. Tuck wings under back of turkey. Cover turkey loosely with a "tent" of aluminum foil.
     
  2. Roast 15 min. Reduce oven to 350 degrees and roast; see table below for approximate cooking times. Check internal temp by inserting thermometer into thickest part of inner thigh area where leg connects to body of bird - but not touching the bone. Baste turkey with drippings; roast until internal temp reaches 165 degrees. We recommend using a digital thermometer for best results.
     
  3. Let rest 30 min before carving.

    Approximate roasting times in a 350 degree oven:

     8-12 lbs               2-1/2 to 3-3/4 hours
    12-16 lbs              3-3/4 to 5 hours
    16-20 lbs              5 to 6 hours
    20-24 lbs              6 to 7-1/4 hours
    24-28 lbs              7-1/4 to 8-1/2 hours
Chef Tips
Increase cooking time by 15-20 minutes if cooking turkey stuffed. Be sure stuffing temp also reaches 165 degrees.
