  1. Blanch yu choy stalks 45 sec in large pot of boiling, salted water. Add yu choy leaves; blanch 30 sec. Drain; set aside.
     
  2. Season fish with salt and pepper. Dust both sides with pan searing flour; pat off excess.
     
  3. Heat oil in large pan on MED-HIGH until oil faintly smokes; add fish. Turn over when fish changes color one-quarter of way up and seared side has turned paper-bag brown, 3 min. Reduce heat to MED. Cook 4-6 min, until internal temp reaches 130 degrees. (Check by inserting thermometer halfway into thickest part of fish.) Transfer fish to clean platter; let rest, loosely covered.
     
  4. Drain excess oil from pan. Add sauce and water to pan; bring to simmer. Add yu choy; toss to blend. Serve fish with vegetable mixture; garnish with green onions.
