  1. Preheat oven to 450 degrees. Toss potatoes and onions with 2 Tbsp oil; season with salt and pepper. Place in bottom of roasting pan.
     
  2. Rub roast with remaining oil; season with salt and pepper.
     
  3. Cut 12 small slits into meat, insert garlic pieces into slits. Place roast on top of vegetables; place pan in oven on center rack. Sear 15 min.
     
  4. Reduce heat to 350 degrees; cook about 20 min /lb until desired doneness. Check internal temp by inserting thermometer halfway into thickest part of meat. Remove pan from oven when desired temp is reached. (Refer to temp chart for final cooking temps.) Transfer roast to a clean platter. Let rest 15 min.
      
  5. Cook potatoes additional 15 min or until tender.
