  1. Pat chicken dry with paper towel. Dust with pan-searing flour; pat off excess.
  2. Heat olive oil in pan on MEDIUM-HIGH until oil faintly smokes; add chicken. Turn over when chicken changes color one-quarter of way up and seared side has turned paper bag-brown, 3-5 min.
  3. Reduce heat to MEDIUM. Cook 6-8 min, until internal temp reaches 165 degrees; check by inserting thermometer halfway into thickest part of chicken. Serve with peppers and onions and sauce.
