Mandoline, mini loaf pan (about 5 3/4 inches by 3 inches), plastic wrap

Directions

  1. Preheat grill on MED 10 min. Slice eggplant lengthwise very thinly on mandoline. Arrange eggplant on clean surface; season with salt and pepper. Brush with basting oil. Repeat for both sides. 
     
  2. Coat cleaned grill grate lightly with vegetable oil. Grill eggplant slices 2-3 min each side until browned, moving and turning the eggplant often. Transfer to plate; cool to room temperature.
     
  3. Wipe loaf pan with damp cloth. Lay plastic wrap in pan, pushing into the corners with damp cloth. Edges of plastic wrap should slightly hang over the pan.
     
  4. Place two slices of eggplant in bottom of pan, slightly overlapping to cover the bottom of pan. Spread 1 tsp of red pepper sauce and then 1 Tbsp of goat cheese evenly over eggplant. Top with two slices of eggplant. Spread 1 tsp of marinara sauce and another 1 Tbsp of goat cheese evenly over eggplant. Repeat, filling the pan. Top layer should be eggplant. 
     
  5. Fold plastic over top of pan, pressing to seal. Wrap entire pan tightly with plastic wrap. Chill 4-24 hours.
     
  6. Remove outer layer only of plastic wrap when ready to serve. Invert pan onto cutting board, keeping inner plastic wrap in place. Slice right through the plastic, forming thin slices.  Remove plastic to serve.

  • Use sharp, serrated-type knife when slicing through plastic; this helps keep slices neat and intact.
