  1. Place crab meat in braising pan; set aside.
     
  2. Combine wine, shallots, thyme, and unsalted butter in medium saucepan; bring to rapid simmer on MEDIUM-HIGH. Cook about 10 min until reduced by half. Add cream; return to simmer. Whisk in salted butter; remove from heat.
     
  3. Strain through fine mesh strainer onto crab legs. Warm in braising pan on LOW 5 min; add tarragon. Serve warm.
