Large braising pan


Preheat oven to 350 degrees.

  1. Cut off tops of peppers about 1/2-inch from top (they should resemble a cup). Seed and wash peppers. Cut small slice off pepper bottoms to allow them to stand upright in pan. Dice reserved tops; set aside.
  2. Combine meat, couscous, and couscous seasoning packet in large bowl.
  3. Add reserved pepper, garlic, and oil to braising pan on MED. Cook, stirring, 5 min, until soft but not browned. Season to taste with salt and pepper. Let cool 3-4 min. Add to meat and couscous mixture, with dried cranberries and 1 cup marinara sauce. Combine well.
  4. Fill peppers evenly with mixture; stand peppers upright in pan. Pour remaining marinara over stuffed peppers. Cover; cook about 1 hour and 15 min.
