Braising pan, heavy-duty aluminum foil

Directions

  1. Preheat grill on MED-HIGH 10 min. Place clams in braising pan; top with onions, sausage, and fennel.
     
  2. Whisk together red pepper sauce, 1/2 cup water, olive oil, salt and pepper to taste in medium mixing bowl. Pour over clam mixture; mix gently. Cover pan tightly with foil.
     
  3. Place on grill. Close grill cover; grill 30-35 min until clams open and fennel is tender. Remove foil carefully to avoid steam; check to make certain clams have opened and veggies are tender. If necessary, replace foil and grill 2-4  minutes. (Discard any clams that have not opened.) 
     
  4. Add oranges. Top with orange zest and parsley just before serving. 
Chef Tips
This can be prepared a day ahead through step 2. Cover and chill. Cover braising pan's outside (bottom and sides) with foil to keep it clean while grilling.
