  1. Preheat oven to 375 degrees. Dust chicken lightly with pan-searing flour; pat off excess. Combine panko and basting oil in small bowl; set aside.  
     
  2. Heat olive oil in pan on HIGH until oil faintly smokes; add chicken. Cook until chicken changes color one-quarter of way up and seared side has browned, about 3-4 min. Transfer chicken to parchment paper-lined baking sheet, seared side up. 
     
  3. Spread 1 tsp pesto evenly over each chicken breast. Top with alternating slices of tomato and cheese on each chicken breast. Sprinkle each with about 2 Tbsp panko mixture, then 1/2 tsp grated cheese.
     
  4. Bake, 20-25 min, until internal temp reaches 165 degrees (check by inserting thermometer halfway into thickest part of chicken).
