Directions

  1. Preheat oven to 350 degrees. Add cauliflower and spinach to extra-large mixing bowl; season with salt and pepper. Add 1/2 cup bread crumbs, alfredo sauce, and mozzarella; mix well. Set aside.
     
  2. Combine remaining bread crumbs and basting oil in small bowl. Set aside. Grease baking dish with olive oil; add vegetable-cheese mixture.
     
  3. Bake, uncovered, 40 min, stirring halfway through cooking time. Remove from oven; sprinkle with bread crumb-basting oil mixture. Return to oven; bake 15 min, until topping is light golden brown.
Chef Tips
  • For a heartier dish, add diced meat and juices from one Wegmans Honey Brined Plain Rotisserie Chicken (about 3 cups) to mixing bowl in step 1.
