Preheat oven to BROIL.
  1. Toss spinach with oil; place in bottom of shallow-sided, oven-proof casserole dish. Spread tomatoes around spinach along edge of casserole.
  2. Add butter, shallots and thyme to pan. Melt and blend, but do not burn the butter. 
  3. Place tilapia on top of spinach; spread 1 Tbsp shallot and thyme butter mixture on each filet; season with salt and pepper.
  4. Broil on center rack of oven until slightly browned and cooked through, 10-12 min.
