  1. Preheat oven to 450 degrees. Slice eggplant 1/2-inch thick; season with salt and pepper.
  2. Place basting oil and panko in 2 separate, shallow dishes. Dip eggplant slices in basting oil, then in panko.
  3. Place in single layer in large baking pan; bake 25 min.
  4. Remove pan from oven; top each eggplant slice with a dollop of cheese. Drizzle with warmed sauce.
