  1. Lightly dust fish with pan-searing flour; pat off excess. Heal olive oil in large braising pan on MED. Brown fish lightly, 2-3 min each side. Remove from pan; set aside. Discard all but 1 Tbsp oil.
     
  2. Add fennel to pan, cook on MED-HIGH about 5 min. Add mirepoix; cook 3-5 min, stirring until lightly browned.
     
  3. Add wine; stirring to loosen brown bits on bottom of pan. Reduce heat to LOW. Add puttanesca sauce and stock. Bring to simmer; return fish to pan.
     
  4. Top with 2 sprigs oregano; cover. Cook 15-18 min, until fish reaches internal temp of 130 degrees. (Check by inserting thermometer halfway into thickest part of fish.)
