  1. Preheat oven to 350 degrees. Dust chicken pieces with pan-searing flour; pat off excess.
     
  2. Heat oil in large braising pan on MED, until oil faintly smokes. Add chicken; brown, turning to brown all sides, 8-10 min. Remove chicken and set aside. Discard all but 1 Tbsp drippings from pan.
     
  3. Reduce heat to MED-LOW. Add mirepoix and garlic; cook 10-12 min, stirring occasionally, or until garlic is lightly browned. Add herbes and bay leaves; cook 3 min. Add wine; cook 7-10 min, until liquid is reduced by one-third. Add stock. Return chicken to pan. Heat to simmering. 
     
  4. Braise, covered, on center rack of oven 1 hour. Carefully remove lid; cook 20 min, until meat is fork-tender and sauce is thickened. Remove bay leaves. Skim fat from surface and discard.
     
  5. Transfer chicken to clean platter. Stir parsley into sauce; season with salt and pepper. Pour sauce over chicken.
