Directions

  1. Quarter chicken, separating leg from thigh and cutting breast in half through the bone. (Do not remove skin or bones.)
     
  2. Heat olive oil in braising pan on MEDIUM-HIGH until oil faintly smokes. Add chicken. Cook 1 1/2 min, skin-side-down. Turn over; cook about 1 1/2 min. Transfer chicken to clean platter; set aside.
     
  3. Make sauce: Add water carefully to pan, stirring to loosen browned bits on bottom of pan. Reduce heat to MEDIUM. Add salsa and cinnamon to pan. Bring to simmer; cover and simmer about 15 min. Remove lid. Cook uncovered about 6 min, stirring often until sauce is reduced by one-quarter and thickened. 
     
  4. Reduce heat to LOW. Add chocolate; stir until chocolate is melted. Season with salt and pepper.
     
  5. Return chicken to pan. Simmer about 8 min until heated through.
