  1. Preheat oven to 350 degrees. Season beef with salt. Heat oil in braising pan on MED-HIGH. Add beef; cook, turning to sear all sides, about 10 min.
  2. Add sauce and water to pan with beef; bring to simmer. Cook, simmering, 5-7 min; remove from heat. Cover; place in oven. Cook 30 min; remove from oven. Turn roast over. Cover; return to oven. Cook 2 hours.
  3. Remove from oven. Add carrots; stir. Return to oven, uncovered; cook 20 min. Remove pan from oven; transfer beef to cutting board. Add mushrooms to pan; stir. Return to oven, uncovered; cook 20 min. Remove from oven.
  4. Shred beef; remove any fat. Return shredded beef to pan with veggies and sauce; stir to combine. Season with salt. Return to oven, covered; cook 20 min. Remove from oven; let rest.
