Braised Beef Minestrone

Large braising pan

Directions

  1. Preheat oven to 350 degrees. Dust beef with pan-searing flour; pat off excess.
     
  2. Heat oil in braising pan on MED-HIGH until oil faintly smokes. Add beef. Turn over when beef changes color one-quarter of way up and seared side has browned, about 3-4 min. Sear other side until browned, about 2 min. Remove from pan.
     
  3. Wipe pan clean, leaving about 1 Tbsp liquid. Reduce heat to MED; add soup veggies. Season with salt and pepper. Cook, stirring, 3 min.  Add stock, tomatoes, and sauce; stirring to loosen browned bits on bottom of pan.
     
  4. Return beef to pan. Bake, covered, 2 hours. Remove from oven; add uncooked pasta and beans, stir to coat. Return to oven; bake, covered, 20 min. Remove from oven; stir in spinach. Let rest, 2 min, until spinach is slightly wilted. Season with salt and pepper.
