  1. Place potatoes on microwave-safe plate; cover with paper towel. Microwave on HIGH 3 min, until tender. Set aside.
     
  2. Heat oil in stockpot on MED. Add mirepoix and fennel; season with salt and pepper. Cover; cook, stirring often, about 8 min, until softened. Add red pepper, potatoes, and wine; stir to combine. Bring to simmer; cook, uncovered, 5 min. Add bouillabaisse sauce; return to simmer.
     
  3. Add clams; cook 4 min. Add scallops, lobster, shrimp, and snapper; stir to combine. Add mussels; cover. Bring to simmer; cook, 8-10 min, until mussels open and seafood reaches 145 degrees (check by inserting thermometer halfway into thickest part of seafood). Discard any unopened mussels.
     
  4. Transfer seafood to serving dish. Add parsley to sauce in pot; stir. Season sauce with salt and pepper; ladle over seafood.
Chef Tips
  • You can shave the fennel using a mandolin.
  • Try using 1 pound snow crab clusters in place of lobster tails.
