  1. Preheat oven to 450 degrees. Place meat on rack in roasting pan. Rub roast with oil, salt and pepper on all sides.
     
  2. Place roast in roasting pan on center rack of oven; sear 15 min.
      
  3. Reduce oven temperature to 350 degrees; cook about 20 min/lb until desired doneness. Check internal temp by inserting thermometer halfway into thickest part of meat. (Refer to temp chart for final cooking temps.)
     
  4. Remove from oven; place roast on cutting board. Allow to rest 15 min before slicing.
     
  5. Add mushrooms to juices in roasting pan; cook, stirring, on MED until tender, 4-6 min. Add mushroom marsala sauce; simmer 2 min. Serve sauce with roast.
