Beef Sirloin Roast in Mushroom Wine Sauce

Small roasting pan

Directions

  1. Preheat oven to 450 degrees. Place meat in roasting pan; rub with basting oil and cracked pepper blend.
     
  2. Sear on center rack of oven 15 min; reduce heat to 350 degrees.
     
  3. Roast about 20 min per pound, until desired doneness. (Refer to temp chart for final cooking temps.) Check internal temp by inserting thermometer halfway into thickest part of meat.
     
  4. Transfer roast to clean platter; let rest 10-20 min.
     
  5. Transfer roasting pan to stovetop on MED: add mushrooms. Cook, stirring, 3 min. Season with salt and pepper. Add shallots, stir 3-4 min. Add wine; cook, stirring to loosen browned bits from bottom of pan. Stir in tarragon, vinegar and demi glace until well-combined. Add butter; stir to combine.
