Baked Pasta with Sausage & Vegetables

Ingredients

Small roasting pan (10x13x3-inch), nonstick cooking spray, parchment paper, foil

Directions

  1. Preheat oven to 400 degrees. Combine cooked pasta, sauce, sausage, artichokes, spinach, and half of the ricotta in large mixing bowl. Toss until well-combined.
     
  2. Spray bottom and sides of baking dish with nonstick cooking spray. Add pasta mixture to dish. Cover with parchment paper placed directly on mixture; then foil.  
      
  3. Bake 55 min. Remove from oven; remove foil and paper. Dollop remaining ricotta over mixture; sprinkle with bread crumbs.
     
  4. Return to oven. Bake, uncovered, 25-30 min, until internal temp reaches 165 degrees (check by inserting thermometer halfway into center of casserole).
