  1. Preheat oven to 375 degrees. Combine flour, oats, flaxseed, baking soda, and cinnamon in a small bowl.
     
  2. Beat butter and dark brown sugar in a large mixing bowl until creamy. Add egg and vanilla; mix until combined. Gradually beat in flour mixture. Add dried fruit; stir.
     
  3. Drop rounded Tbsp of mixture onto ungreased baking sheets. Bake 9-11 min, until done. Centers will be soft and edges very light brown.
  4. Let cookies rest 1-2 min on baking sheet before removing to cooling rack.
Chef Tips
We use raisins, dried cranberries, dried apples, dates, and dried cherries when baking this cookie. Try mixing various dried fruits (1 1/2 cups total), or simply use the same amount of any one dried fruit.
