12 (6 oz each) ramekins

Directions

  1. Sprinkle gelatin over 2 Tbsp water; let soften 10 min. Split vanilla pod. Scrape out seeds and set aside; reserve pod.
     
  2. Whisk together 1 cup cream and yogurt in bowl. Set aside.
     
  3. Add remaining cream, sugar, vanilla pod, and seeds to saucepan on MED; bring to simmer. Remove vanilla pod. Add gelatin; whisk to combine. Fold mixture into cream-yogurt mixture.  
     
  4. Portion evenly between 12 (6 oz each) ramekins. Chill, covered, at least 8 hours.
     
  5. Add green grapes, red grapes, and honey to bowl; season with salt and pepper. Toss to combine; let rest at least one hour to blend flavors. Top each ramekin evenly with grape mixture before serving.
Chef Tips
  • For vegetarian option, replace gelatin with same amount of agar-agar flakes.
  • Save pod and store with sugar to make vanilla sugar.
