9-inch Springform pan, electric mixer

Directions

  1. Preheat oven to 300 degrees. Grease springform pan. Cover pan bottom tightly with foil; place pan on pan larger than springform pan (for water bath).
     
  2. Combine 1/2 cup water, salt, and sugar in a small saucepan on MED. Stir until completely dissolved; set aside.
     
  3. Melt chocolate and butter in microwave or in the top of a double boiler.
     
  4. Mix sugar-water with melted chocolate and butter with electric mixer. Slowly beat in eggs, one at a time.
     
  5. Pour batter into prepared pan; transfer to oven. Carefully add boiling water until water reaches halfway up sides of the springform pan. (Foil keeps water from seeping into springform pan.)
     
  6. Bake cake in water bath about 50 minutes until internal temp reaches 165 degrees (insert thermometer 1-inch from center). (edges will be set but center will still appear soft). Carefully transfer springform pan to cooling rack (leave water bath pan in oven until it cools enough to remove). When cake cools, chill in pan overnight. To serve, remove sides of springform pan. Refrigerate leftovers.
