Directions

  1. Preheat oven to 400 degrees. Add nuts to dry pan on MED-HIGH. Cook, stirring, 1-2 min, until toasted.
    Set aside. 

  2. Combine sugar, 1 Tbsp orange juice, rum, vanilla, cinnamon, and orange and lemon zest in large bowl. Fold bananas into juice mixture until well coated. Add to baking dish; cover with foil. Bake on oven center rack 10 min. 

  3. Remove from oven; carefully remove foil. Stir gently to coat bananas; re-cover with foil. Bake 12-14 min until bananas are soft, yet still hold their shape. 

  4. Remove from oven; carefully remove foil. Sprinkle bananas with nuts. Portion evenly into 12 serving dishes; top each with 1/4 cup ice cream.

Chef Tips
  
  • Bananas can be prepared an hour in advance, then covered and chilled. Put in oven 25 min before serving (may need extra cooking time).
