Compote & Syrup

You'll Need

Martini glass, fine sieve, cocktail shaker or pint glass (for shaking)

Directions

  1. Make compote & syrup: Combine cranberries, sugar, water, and juice into saucepan.  Simmer; mashing berries with a spoon.  Cook 15 min to reduce liquid to syrupy consistency; should be thick enough to coat back of spoon. Strain out solids; reserve syrup. Chill 4 hours or overnight in fridge. Makes enough syrup for about 24 drinks.
     
  2. To make one drink: Add vodka, sweet vermouth, and 1 Tbsp (1/2 fl oz) syrup into shaker with ice. Shake vigorously; strain into chilled martini glass.  Garnish with a skewer of dried or fresh cranberries.
Chef Tips
  • There's no need to thaw cranberries.
  • Compote & syrup can be made a day ahead.
  • Remaining cranberries can be dried and used for salads and quinoa dishes.
