1.  Make gingerbread spice: Mix cinnamon, ginger, allspice, nutmeg, and cloves; set aside.   


2.  Make gingerbread spice simple syrup: Add water to small saucepan; bring to boil on HIGH. Remove from heat; add 2 tsp of prepared gingerbread spice. Strain. Add sugar and stir to dissolve. Set aside


3.  Combine gingerbread spice and cocktail sugar. Moisten rim of martini glass with water or citrus wedge and coat rim with sugar mixture. Chill glass.

4.  Mix brandy, rum, 1 oz simple syrup, and juice in cocktail shaker with ice. (Refrigerate remaining simple syrup.)  Shake; pour into glass. Garnish with cherries.  

Chef Tips
  • Be sure to add only the faintest bit of clove to the sugar--it's a strong spice.
  • The amount of gingerbread spice called for in this recipe will yield enough for 3 batches of simple syrup with a bit left over to garnish as you see fit.
Short on time? You can replace all gingerbread spice ingredients with 6 tsp pumpkin pie spice and 1 tsp of ground cloves, mixed together; add in where gingerbread spice is called for.
