  1. Preheat waffle iron. Pierce yam 4 or 5 times with tines of fork. Microwave on HIGH until tender, 8-10 min; cool slightly. Cut in half. Remove yam from skin, using folk to break up slightly. Discard skin.
     
  2. Combine pancake mix, 1 3/4 cups water, and oil in large mixing bowl; whisk until smooth. Add yam, whisking until well blended.
     
  3. Lightly coat waffle iron with cooking spray. Spoon batter into waffle iron, using amount recommended in waffle iron instruction guide. Close lid and bake until brown, 6-8 min or as directed. Repeat with remaining batter, spraying iron with cooking spray each time.
Chef Tips
  • To keep waffles warm, arrange in single layer on cookie sheet and place in LOW (200 degree) oven.
  • Serve with Wegmans Organic Maple Syrup.
